Grilled Chicken Thighs with Onions, garlic, tomatoes, and potatoes – Just absolutely non-rich and simply delicious!I have made this 4 nights in a row! Yes, I did say 4 nights in a row!

Grilled in a Halogen /FlavorWave Oven, positioned on top of veggies.

Notes: 

There is no need to peel your potatoes as the nutrients lay just beneath the skin. If not peeling them just give them a good scrub and wash.


Ingredients:

6 (810 g) chicken thighs

5 potatoes, medium (peeled or unpeeled)

1 onion, medium

4 garlic cloves

526 g (3 – 4) tomatoes, medium

Salt to taste

Cayenne pepper to taste

Sprinkling parsley

15 ml dhania, chopped or to taste


Method:

1. Place chicken skin side down on a grilling rack placed on a dripping pan to catch chicken drippings.

2. Grill chicken thighs at 165 C (329 F) until crispy and then turn over and grill skin side up until golden and crispy. Leave on a rack, undisturbed, allowing to cool or remove to plate.

3. In a 1000 watt microwave steamer with sprinkling water, steam potatoes 4 at a time for 18 – 20 minutes or until fork-tender. Set aside to cool.

4. On a plate, covered with a large, enough, bowl, steam sliced onions for 60 minutes. Set aside.

5. Onto another plate, slice garlic into thin slivers and over this slice the onions, cover and steam 2 minutes or if you like a stronger garlic flavor do add your garlic slivers once you put everything together before placing under the grill.

6. Remove chicken, setting it aside. Remove rack.

7. Place all your veggies into the chicken fat, stock, and drippings. Sprinkle with salt, cayenne pepper, parsley, and freshly chopped coriander or dhania chutney, which also goes very lovely if you have some.

8. When the veggies are almost cooked return chicken to place over the top of your veggies and heat all through gently under the grill.


Here I have removed the chicken, which I grilled laid on top of my veggies to continue grilling the veg.


Once the chicken is out you may grill your microwave pre-steamed veg.
