Best Buttermilk Waffles Ever! The one I have been making all my life!

This recipe comes from a Your Family Magazine dated November 1991 and has always been my go to recipe – Enjoy!

Makes 12

Note:
An extra squeeze (5 ml) lemon juice, brandy or rum (5 – 10 ml) improves both waffles and pancakes. It gives them that extra bit of acid to boost lightness.Sifting your dry ingredients 3 times always improves the lightness and texture of all baked goods. All measures are loosely packed and leveled off with the back of a knife – It is baking law!If you are out of buttermilk, per 250 ml cup measure, stir in a tablespoon freshly squeezed lemon juice and then top up with milk, stir and then set aside for a minute or two to thicken up. Fresh lemon juice is always preferable to vinegar.

Ingredients:250 g (500 ml) Cake flour10 ml baking powder5 ml bicarbonate of soda3 ml salt60 g butter or a hard good tasting margarine, melted500 ml buttermilk (plus 5-10 ml rum/brandy or 5 ml lemon juice)3 large eggs, separated

Method:Sift together flour, baking powder, bicarbonate of soda and salt. Sift 3 times for extra added lightness.

Dissolve butter, cool down until warm. Mix together, melted butter, buttermilk and egg yolks.

With clean beaters, whip up egg whites just until they are able to stand up holding soft peaks but not that they begin to deflate, dry out and form balls!

Stir your melted butter, buttermilk and egg yolks into your dry mixture. Do not beat.

Gently with spatula, fold in your egg whites using over and under motions, being careful not to knock out any air.

Heat a waffle iron, grease well.
Pour in batter, spread to edge of grid, close waffle iron and cook three to five minutes, or until it stops steaming. Remove waffle and keep warm. Repeat until batter is used up.

To serve:
Top with ice-cream and fresh fruit or warmed honey, whipped cream and sprinkle nuts.I always loved buttering mine and serving with maple syrup, whipped cream and vanilla ice-cream but not today LOL my weight would shoot to through the roof!😀The Caramel Banana Cream Flan/Sponge/Tart is to die for! Recipe in my facebook notes. The Chicken and rice dish is also lovely but a very plain dish for nights when you want to cook something quick, easy and simple – This is where the microwave comes in handy.Waffle Day in Sweden is called “Våffeldagen” (Waffle Day.) It’s also Lady Day (“Our Lady’sDay“) the day when the Virgin Mary was informed by the Archangel Gabriel that she was pregnant (nine months before Christmas) the Christian holiday of Annunciationand the Waffle Day is hence celebrated on the same day although it has no religious connections to Our Lady’s Day. Some say the 25th of March date should be treated as “International Waffle Day” and 24th August as American Waffle Day. In the America National Waffle Day is celebrated 24 August, the date of a U.S. patent on a waffle iron.
