This recipe came out of an old Rhodesian Cookbook - Now Zimbabwe

Ingredients:
675g beef shin and neck (I used a total amount of 1.4kg)
225g bacon
2 apples, peeled and chopped
2 onions, chopped
4 tomatoes peeled and sliced
3 or 4 green or red peppers, sliced
3/4 pint water
2 beef cubes
1 Tbsp Worcester sauce
2 bay leaves and thyme to taste
6 carrots
1 stick celery (Optional)
Potatoes (Optional) or have it over mash if you wish
6 garlic cloves
Method:
Fry bacon in pan, chop and place in saucepan with bacon fat fry apples and onions together and remove these to saucepan. Add more oil and fry peppers and tomatoes again adding to pan. Quickly brown meat that has been cubed and add to other ingredients adding 3/4 pint water and beef cubes. Flavour with the Worcester sauce, bay leaves and thyme. Bring to boil and simmer for as long as possible – minimum time 3 – 4 hours, adding carrots about half an hour before the dish is cooked. Serve with rice. Enjoy!
