Lovely served with egg and bacon for breakfast (using the Ottimo pie-maker machine as seen above or the cupcake machine as seen below) or even, simply, just an egg. An absolute treat served with Chicken Mayonnaise Coleslaw salad, with cheese or melted cheese. Divine heated and slathered in hot, salted butter. NOTES:

  • These buns without added vegetables like pumpkin or 🧅 onions are on the dry side baked with coconut oil, however, for a moister bun, if omitting vegetables, you may replace the coconut oil with vegetable oil for moister buns.
  • To make pumpkin buns, omit the water, and use your rice as per the recipe. Weigh 600 g of pumpkin. Steam your pumpkin until very soft, drain, and add it hot to your salt, rice flour, and coconut oil mixture, it will automatically melt your coconut oil and thereafter continue as per usual with your recipe.
  • When I come to the kitchen to make coffee, I give my rice four good pulses in my coffee grinder. When I return a second time, after the machine has cooled, I give it the final four pulses/grindings - totaling eight. I then empty it into my container. I continue repeating the above process, so I always have enough ground rice in my container to make these deliciously filling buns.
  • You may also make these buns with Jasmine rice which is more expensive, however, I find they stay fresh for longer. The batter will be a lot runnier than with your usual rice, but you will find that your buns will set nicely and be a lot softer, fluffier, and moist.
  • Never allow your machine to burn out. Always follow its manual of instructions.
  • All measures are loosely packed and leveled off with the back of a knife.
  • Finely chopped fresh parsley added to your batter looks lovely embedded into the white tops of the buns once they have baked, however, this is optional.


INGREDIENTS:
348 g (475 ml) ground white regular/Jasmine rice - see NOTES above
2.5 ml salt  
112 g (105 ml) coconut oil 
228 ml (228 g) of hot water
whole eggs, large
25 ml apple cider vinegar
10 ml baking soda


METHOD:

  1. In a coffee/spice grinder, grind your rice four times, then repeat the same process. Take your time. Do not allow your machine to burn out. See the NOTES section above. 
  2. To your mixing bowl or container, large enough to hold your mixture, add your ground rice together with salt. Give it all a good stir to blend. Set aside.
  3. Measure in your coconut oil, chopped if it is solid. 
  4. At the same time, bring your water to a boil in a kettle. 
  5. Pour your hot water over your chopped coconut oil, salt, and rice mixture, blending it with your 'unclipped electric beaters.'
  6. When your mixture reaches body temperature, add your eggs, apple cider vinegar, and baking soda.
  7. Blend it with your unclipped electric beaters until all your ingredients are well incorporated and wetted. Now you may clip your beaters into your machine, switch it on, and beat your mixture until it is well aerated and fluffy. Set aside.
  8. Switch on your Ottimo Cupcake/Pie maker machine without the need to grease its pans.
  9. Using a tablespoon, fill the pans 2/3rds of the way. Close the machine and bake until done. To test if the buns are ready, gently press your finger onto the tops of the buns - if they don't leave a dent and spring back, they are ready. Remove the buns to a cooling rack. 
  10. Enjoy!
