Shin of Beef and Brisket Vegetable Soup - fit to serve a King!



This soup is so deliciously plain as it is. NO additives, GMOs, or Preservatives! 

I've even made it without the garlic and celery, and it was just as delicious, so I would assume one may skip the ginger, too, if out of stock, and it will still taste delicious. 

Serves: Makes a 5-liter Pot of Verry Delicious Soup!

 

Notes:

To avoid damage to your immersion blender, make sure you have removed ALL bones before running it!

Ingredients:

422 g Beef consisting of one slice of beef shin with marrow bone and one slice or piece of a nice fatty brisket

30 ml fat (I used coconut oil)

Salt and Cayenne Pepper to taste (seasoning)

Ginger, fresh - lady thumb size

2 onions, medium 

412 g or 2 carrots, large

452 g green beans (I used frozen green beans)

3 stalks of celery, with leaves

5 - 6 garlic cloves


Method:

1. Add your whole pieces of meat to your pot together with some salt and cayenne pepper to taste, then add your fat with just enough water to cover your meat. 

2. Bring to the boil, then lower heat to allow simmering. Add your roughly chopped onions, and continue simmering until water evaporates and meat gently browns in its fats. Do not allow meat and onions to burn. 

3. Once your meat browns, and onions are tender, add your whole piece of ginger together with your carrots, whole or roughly chopped. Add water to cover and continue simmering, topping up with water as needed or until your meat begins to fall from the bone. 

4. Add your chopped green beans, followed by your celery.

5. Continue simmering until your greens, beans, and celery are cooked but not overcooked that they turn dull.

6. Do not overcook your veggies.

7. Adjust seasoning, adding just enough water to taste.

8. Lastly, before serving, turn off the heat, remove all bones, and add your whole garlic cloves grouped tightly together - place immersion bender over, encasing all cloves and purree.

9. Using your immersion blender, roughly break up the larger veggies to your liking.
