A Delicious South African Beef and Vegetable Soup

Makes 5 Litres

This recipe came straight from my head many years ago and was written down and saved to my best recipe collection.

I used to make it a lot until my food allergies hit. I really do miss this one! And intend to recreate an allergen-free version sometime soon.

However, for those who can still enjoy packet soups and aromat... Well, here it is in all its Glory for when the cold winter chills set in...

Ingredients:

3 medium or 2 large beef shins with marrow

3 medium to large onions, chopped

8 medium potatoes, finely chopped/diced

4 large carrots, chopped/sliced

3 large tomatoes, chopped

¼ of one small cabbage chopped

3 packets Royco Chicken Noodle Soup/Knorr Beef & Vegetable Soup/Combination

½ of a whole garlic bulb, crushed

3 sticks celery, chopped. Leaves reserved

½ a sachet of aromat (from the box)

3 chicken stock cubes

Optional: 2 Bay leaves, dash allspice powder + dash powdered cloves/3 whole

  1. Cook beef for 2hrs.
  2. Now add in the following order...
  3. First, Onions, then potatoes, next carrots, your celery reserving its leaves, and lastly, your tomatoes.
  4. Cook for a further 50 minutes.
  5. Add the cabbage. Add your packets of soups mixed according to its instructions. And your garlic.
  6. Lastly, add your finely chopped celery leaves.
  7. Season with aromat and stock cubes to taste
  8. Simmer about 10mins.
  9. Turn off and allow the flavors to intermingle.

Serve and Enjoy!
