Mealie meal is a coarsely ground South African flour made from white mielies .
Notes:
- American cornmeal is slightly coarser than our South African mealie meal, so to bring it closer to the South African version, you may run it through a coffee grinder.
- This may be baked in a pie maker - your breakfast egg, too - a perfect fit for a bun! It may also be baked as One Large loaf in your Bread Machine
Ingredients:
616 g or 1 liter mielie meal 🌽
10 ml salt🧂
112 g coconut oil 🌴 🥥 or butter 🧈
750 ml/g hot water
6 large eggs 🥚
20 ml baking powder
Method:
- Weigh your mielie meal into your bowl 🥣 placed on your scale ⚖. Add your salt 🧂
- Weigh in your coconut oil 🥥
- Weigh your hot water - bring a kettle to boil and pour your hot water over the coconut oil to dissolve it.
- Vigorously stir your mixture until well blended.
- When your mixture reaches body temperature, you may add your baking powder and crack over your eggs.
- Vigorously blend well with a spoon until all your baking powder is distributed throughout the mixture.
- Give your mixture one more beating with an electric beater or immersion blender until smooth and aerated - do not overmix.
- Preheat a cupcake maker or your oven to 180 C or 356 F
- No need to grease your bakeware, as the mixture has plenty of fat.
- Using a tablespoon, drop in the mixture until it fills the pans 2/3rds of the way, and bake until done. Your buns are done when you can gently pull them slightly away from the walls of the pan with a finger, and the mixture bounces back when a finger is gently pressed to their tops.
- Remove buns to a rack to cool.
